What is gelato?

• Gelato is Italian ice cream. The word “gelato” is Italian for “frozen.”

• Gelato differs from ice cream in that it contains significantly less butterfat (4-8% by weight in gelato compared to 10-20% by weight in ice cream), so it’s healthier. It’s made mostly with whole milk, as opposed to using a lot of cream. That means the flavors in gelato are more intense, because there’s less fat coating the taste buds.

• Gelato is very dense; it has much less air incorporated into it than ice cream, and thus it weighs almost twice as much per scoop as most ice creams. This is another factor that adds to its intense flavor.

• Finally, gelato is served at a slightly warmer temperature than ice cream; therefore, the taste buds aren’t numbed by the cold temperature.

What is sorbetto?

• Sorbetto, or italian fruit ice, is made primarily from fruit and/or fruit juice, sugar, other seasonings, and water--plus a very small amount (less than 5% by weight) of skim milk solids to enhance the consistency. It's super refreshing on a hot summer day!
